AUNT'S RICE

  • 3 cups of white rice COMARROZ
  • 6 tablespoons oil
  • 1 pound of pork cut into thick pieces
  • 1 pound rib cut into small pieces
  • 1 cup of shelled red bell pepper, chopped into strips
  • 3 long onion wedges (including green branches) coarsely chopped
  • 4 whole garlic cloves
  • 6 cups of water
  • 2 teaspoons achiote powder
  • Preparation



  • 1 cup of beans in pieces
  • 1 cup of peas
  • ½ cup of chopped celery
  • 2 artichokes, cut into chunks
  • 1 cup of carrot cut into squares
  • 1 cup of shelled cob
  • ½ cup of olives
  • ¼ cup capers
  • Salt

In a large pot, heat the oil and add the garlic, paprika and onion over medium heat until transparent (10 minutes). Add the meats little by little to release their flavor. Add the rice, the water with the diluted achiote and the salt. When the water boils add the vegetables. Remove the onions and garlic. Bring to a boil over medium heat uncovered for 10 minutes. Add olives and capers, lower heat to low, cook covered until rice is tender. In the end it should be a little damp.
